Where It Comes From

Origin:
Kerala, India – Western Ghats region

Cardamom grows under forest canopy at higher elevations, where cool temperatures and humidity slow growth and concentrate aroma. This region is known for producing the most fragrant green cardamom in the world.

How We Process It

Cardamom pods are hand-harvested at peak ripeness.
They’re dried slowly to preserve color and essential oils.
Each lot is sorted for size, color, and oil content.

Only plump, aromatic pods make it into our pantry line.

Why are these cardamom pods green and not brown?

Green cardamom is dried carefully to preserve chlorophyll and essential oils. Brown or gray pods usually indicate age or aggressive drying that has degraded the aroma and flavor.

Do I need to grind cardamom pods?

You can crush and use whole, or grind the seeds fresh. Grinding fresh gives the most aroma. Whole pods can be added to dishes and removed before serving.

How much cardamom should I use?

Less than you think. Cardamom is potent. Start with one or two pods for a pot of chai or rice, then adjust to taste.

Is this the same cardamom used in chai?

Yes. This is the same variety of green cardamom (Elettaria cardamomum) that we use across all our chai blends.

How long does cardamom stay fresh?

Whole pods stay fresh up to a year unopened. After opening, best within 4–6 months for peak aroma. Store in an airtight container away from heat and light.
