About shelf stability: To keep coconut milk and spices from separating for 18 months, we use plant-based stabilizers. No preservatives. No artificial flavors.

Where It Comes From

Ginger:  Organic farms, China (TBD) 

Cardamom: Family farm in Chathurangapara, Kerala (Western Ghats, around 1000m elevation). Hand-picked. Same cardamom as our original masala chai.

Black tea: Idukki district, Kerala. Cold-brewed for 1-2 hours.

Star anise: Vietnam (Searching for partner farms)

Cloves: Partner farms in Kerala. Adds depth without overpowering the ginger.

Cinnamon: True Ceylon from Sri Lanka. Adds warmth and subtle sweetness.

Coconut milk: Organic farms, Sri Lanka.

How We Make It

The ginger is the whole point here. Most chai treats ginger as a background - a hint of warmth. But at Kathas, we wanted it center stage.

We source ginger from organic farms currently. We’re hoping to work with farms from Kerala soon! However, ginger is a little more difficult to directly source compared to other ingredients, because it is harvested directly from the soil. Although we at Kathas strive to work with any and all of the farms in the community of Kerala, India, we need to also properly plan and help develop local systems and infrastructure. 

Cardamom and other spices are roasted separately - around 400°F for 4-5 minutes, depending on batch size. Watch for toasted, caramelized notes without crossing into burnt.

We grind the spices within an hour or two, then blend everything with coconut milk.

Ginger Chai with Coconut Milk

Drink cold for a bright, refreshing ginger chai, or warm gently for a more grounding, spice forward cup. Shake before opening to evenly distribute the ginger and coconut milk.


Best served: Chilled, right from the can and in the company of others.

FAQ

How is this different from your regular Masala Chai?

Ginger is the lead character here, not a background player.

Regular Masala Chai:

  • Cardamom-forward, warming, balanced
  • No Ginger 
  • Classic Kerala chai flavor profile

Ginger Chai:

  • Ginger-forward, spicy, bright
  • You taste the ginger FIRST, then cardamom and other spices layer in
  • For people who want more heat and bite
  • Perfect for some extra ginger during the seasonal colds

Both use the same cardamom from our family farm, the same black tea from Idukki, and the same coconut milk. The ratio is just different.

If you like ginger, get this one. If you're not sure, start with the regular Masala Chai.

Is this actually spicy or just "warm"?

It has a bite. Real ginger bite.

It's not chili-pepper spicy. It's ginger spicy - warming, slightly peppery, clears your sinuses, wakes up your mouth.

If you're used to store bought chai (which is basically sweet milk with "chai spice essence"), this will feel VERY different. The ginger is prominent. 

If you're the person who adds fresh ginger to everything - tea, smoothies, stir-fries - you'll love this. If you're tentative about ginger, start with our regular Masala Chai.

Can I drink this cold or does it need to be heated?

Both! Most people drink it cold, but it's incredible warm.

Cold (over ice): Refreshing, bright ginger punch. Good for hot days or afternoon energy with friends.

Warm/hot: The ginger warmth is more pronounced when it's heated. It spreads through your chest and stomach. Perfect for cold mornings or when you're feeling run down.

To heat: Pour into a small pot, heat until steaming (don't boil), pour and sip.

How long does it last after I open it?

Once opened, refrigerate and drink within 1-2 days for best flavor. Unopened cans are shelf-stable for 18 months - check the date on the bottom of the can.

Pro tip: Pour leftover chai into a glass jar with a lid before refrigerating and it will last much longer.

Will this help with nausea / digestion / sore throat?

Ginger has been used for centuries for exactly those things.

Fresh ginger contains gingerol, which has anti-inflammatory and digestive properties. People use ginger for:

  • Nausea (morning sickness, motion sickness, general upset stomach)
  • Digestive support (helps things move along)
  • Sore throat / congestion (the warming, circulation-boosting effect)
  • Menstrual cramps (anti-inflammatory)

That said: We're not here to make medical claims. We're making chai. If you're looking for therapeutic doses of ginger, you'd probably need more than what's in a can of chai.

But anecdotally? A lot of our customers drink this specifically when they're feeling run down, have an upset stomach, or are fighting a cold. The ginger warmth is real.

Is this like coffee shop ginger chai?

No. It's better (and different).

Coffee shop ginger chai:

  • Usually uses the same chai concentrate as regular chai (cardamom-forward)
  • Sometimes adds ginger syrup for sweetness
  • 25g+ sugar per grande
  • Ginger is more of a flavor note than actual ginger

Kathas Ginger Chai:

  • Built around fresh Kerala ginger from the start
  • 11g sugar per can -  less than half of theirs
  • You taste actual ginger, not ginger syrup
  • Stone-ground spices, not concentrate

Which is better?

If you want familiar and sweet, theirs is fine.

If you want to actually taste ginger and spices, drink this.

How many servings per can?

Officially, 1 serving, but nice to share (4 oz each). Realistically? Some people drink the whole can - it's hard not to.

The 8-pack gives you 8 cans = 16x4oz servings = enough for 1-2 weeks if you have one serving per day.
