Black tea (Assamica variety from Idukki, Kerala), ginger, cardamom.

Family farm in Chathurangapara, Kerala. Hand-picked, sun dried, lightly roasted.

Black Tea:
Idukki district, Kerala. Assamica variety—bold, malty, and built for milk.

How We Make It

We keep this blend intentionally simple.

Ginger is sliced and gently dried to preserve heat without bitterness.
Cardamom is roasted briefly—just enough to bloom aroma.
Both are stone ground in small batches, then blended with whole-leaf black tea.

No pre ground powders sitting in warehouses. Everything is ground and packed fresh.

How to Make

Traditional Method (Best Flavor)

What you need:

  • 2 heaping tbsp ginger chai mix
  • 1.25 cups water
  • 1 cup milk (any kind)
  • Sweetener (optional)

Sharp, warming, and deeply comforting.

  • Bring water to boil in a small pot.
  • Add chai mix. Reduce heat to low simmer.
  • Simmer 4-5 minutes, stirring occasionally. You'll smell it - floral cardamom, warm cloves.
  • Add milk, return to gentle simmer
  • Simmer another 2-3 minutes.
  • Strain and serve

How many cups does one bag make?

About 30 cups using 2 tablespoons per serving. Each 7oz bag gives you roughly a month of daily chai.

Is ginger chai spicy?

Yes, but not overpowering. The ginger is forward and warming—you feel it in your chest, not just on your tongue. The cardamom softens and balances the heat with floral sweetness.

Can I drink ginger chai without milk?

Absolutely. Many people prefer it black. Without milk, it is sharp, warming, and very traditional. The ginger and cardamom come through cleanly.

Is this authentic Kerala chai?

Yes. Ginger-forward chai is extremely common in Kerala, especially when you want something lighter and simpler than full masala chai. This is the style many families make at home.

How is this different from ginger tea bags?

This is real sliced ginger and whole-leaf tea, simmered together. Tea bags use powdered extracts and cannot extract this depth of flavor. The difference is like instant coffee versus fresh-brewed.

How much caffeine is in ginger chai?

About 50-70mg per cup, depending on how strong you brew it. That is roughly half to two-thirds of a cup of coffee. The L-theanine in black tea makes the energy feel smoother.
