This coffee highlights the Kerala region of Southern India and showcases the best specialty coffee available from the region. It's not chai - it's still very much coffee. Just... better. This coffee is a washed process - it’s a very clean taste, not fruity, more bold dark chocolate. A washed process coffee is where the fruit of the coffee fruit is removed after harvest, the seed is washed, and then set out to dry. 

We wanted to minimize the fermentation of the coffee, only allowing for partial germination when the seed is first wasted and nothing else - giving the coffee a very clean, coffee-forward flavor. Where It Comes From

Coffee: Single-origin Arabica from Idukki district, Kerala. Grown at 1200m elevation in shade-grown estates. Higher elevation means slower cherry development, which concentrates sugars and complexity.

How to Make

Pour-Over / Drip Machine:

Basic ratio: 1:15 (1 gram of coffee to 15 grams of water) 

  • Use a coffee grinder to grind 15 grams of coffee to a medium fine grind (the coarseness of sand)
  • Heat 230 grams of water to 200°F
  • Bloom your 15 grams of coffee with 35 grams of water. Wait 20 seconds. Brew as you normally would
  • Add milk if desired (dairy, oat, coconut—your choice)
  • Sweeten to taste (or don't).

FAQ

How is this different from regular coffee?

Think of it like this: if you're someone who drinks cheap coffee and drowns it in cream and sugar, this probably isn't worth the upgrade. If you already care about coffee quality, this is a way to make your daily brew more interesting without making it taste like a dessert drink.

Can I use this in my regular coffee maker?

Yes. 

Works in:

  • Espresso Machine
  • Drip coffee machines
  • Pour-over (Chemex, V60, etc.)
  • French press
  • [Cold brew?]
  • [Espresso / Moka pot?] [JOSHUA: Depends on grind size]

Just use it like you'd use regular ground coffee. Standard ratio: 2 tablespoons per 8oz water, adjust to your taste.

The only thing you might need to adjust: if you're used to weaker coffee, you might want to use slightly less. 

How much caffeine is in this?

About the same as regular coffee: ~95mg per 8oz cup when brewed at standard strength.

If you brew it stronger (more coffee grounds) or make a large mug, you'll get more. If you brew it weaker or cold brew and dilute it, you'll get less.

The cardamom doesn't affect the caffeine - it's the coffee doing the work.

What milk should I use?

Whatever you want. 

Dairy: Whole milk or half-and-half makes it creamy and rich. The cardamom pairs really well with the milk fat.

Oat milk: Clean, neutral, doesn't fight with the coffee. Good choice if you want the cardamom to be more pronounced.

Coconut milk: Traditional pairing in South Indian coffee. The subtle coconut flavor actually complements the cardamom. (This is what we use in our canned latte.)

Almond / Cashew / Soy: All work. Almond is lighter, cashew is creamier, soy can be slightly sweet depending on brand.

Black: If you drink coffee black ,some people love it, some find it too present. Try it once, see what you think.

Do I need to add sugar?

Not necessarily. The medium roast brings out the coffee's natural sweetness.

Most people add less sugar to this than they would to regular coffee. Some add none.

Start without sugar, taste it, then decide. You can always add more.

How many cups does one bag make?

Example answer:
One 12oz bag makes approximately 22 cups (12oz each) when brewed at standard strength (2 tbsp per 8oz water).

If you brew stronger (3 tbsp per 8oz), you'll get fewer cups. If you brew weaker or make cold brew concentrate and dilute it, you'll get more.

For comparison: A coffee shop latte is $5-7. A decent bag of grocery store coffee is $1-2 per cup but without the single-origin sourcing.

How fresh is this when it arrives?

Example answer:
We roast weekly and grind to order. Your bag is typically roasted within 3-5 days of shipping. You'll get it fresh, not warehouse-old.

For peak flavor, use within 30 days of opening.

Store in a cool, dry place in the sealed bag. If you want to extend freshness, you can refrigerate or freeze it in an airtight container.

Can I use this to make lattes at home?

Absolutely.

Simple home latte:

  1. Brew strong using 3 tbsp per 6oz water (less water = more concentrated)
  2. Steam or heat your milk (dairy, oat, whatever)
  3. Pour milk over coffee
  4. Optional: add a tiny drizzle of honey or maple syrup

With a milk frother:
Brew strong, froth your milk, pour, done.

Without special equipment:
Brew strong, heat milk in a small pot while whisking vigorously (it won't be frothed but it'll be warm and mixed), pour.

You won't get the exact texture of a coffee shop latte without an espresso machine and steam wand, but you'll get close enough that it feels special.
